If you don't have an HDR display or if the software you use for playing videos does not support HDR playback (not all web browsers support HDR playback on Youtube for example), please watch the SDR version, the HDR version will look wrong on your display because Youtube then presents you with an automatic bad looking SDR conversion. The SDR version has a hand-adjusted tonemap and looks exactly as intended, with correct brightness/contrast levels etc., whereas the HDR version will end up looking way too flat and dark. If you do however have an HDR display and software capable of playback in HDR, please watch the HDR stream. The video was produced with an HDR workflow from start to finish, so you get extra bright sabers and a nice bright sun from the HDRI skybox and so forth.
The video was recorded and rendered in 1080p, which is what the SDR download is provided in. For Youtube, the SDR version was upscaled to 4K so Youtube throws more bitrate at it and ruisn the image less. Likewise, even the download version of HDR is upscaled to 4K because it made compression easier and HEVC compression is extremely slow so making two versions was not feasible.
If you want the best experience, I highly recommend downloading the high bitrate encodes for pristine image quality. Youtube will never look truly good, it is merely a mediocre compromise for comfortable watching
The video comes with 5.1 audio. Youtube seems to have a 5.1 stream, but I think it may only work on special Youtube apps on TVs or something like that; in a normal browser experience I'm guessing you get a simple stereo downmix. The downloads have lossless 5.1 FLAC audio.
